Banana and Walnut Slice (GF)

My ventures to trying some freestyle cooking one weekend to come up with some yummy and nutritious snack options resulted in this Banana and Walnut Slice!

It is packed with protein, healthy fats and nutrients, particularly vitamin E, fibre, polyphenols and omega-3.

If not, this recipe could help you better meet your daily nut recommendations while having your cake and eating it too!

This Banana and Walnut Slice may be gluten free but it is still soft, moist and cake like in texture.

If you experience IBS, you could still have a slice! One slice of this cake would contain low levels of FODMAPs and is likely to be tolerated by most people who have FODMAP sensitivities.

Banana and Walnut Slice

Recipe

Ingredients:

  • 4 ripe bananas
  • 2 eggs
  • ½ C milk
  • ¼ C extra virgin olive oil
  • 1 ¼ C almond meal
  • 1 ½  tsp baking powder
  • 1C walnuts

Method:

  1. Preheat oven to 180°C and line a baking tin with baking paper
  2. Peel and mash bananas with a fork in a medium-large sized bowl
  3. Add egg, milk and oil. Mix well
  4. Add almond meal and baking powder. Mix well
  5. Mix in walnuts
  6. Pour mixture into prepared baking tin
  7. Bake in the oven for ~40mins or until golden brown on top
  8. Remove the cake from the tin and onto a cooling rack to cool (you can have it hot as well, just allow it to cool enough to cut so you don’t burn yourself)
  9. Cut into 20 slices (or desired size)
  10. Serve hot or cold
